■17世紀の歴史的農園とその復旧　THE HISTORICAL 17C. FARM AND ITS RESTORATION
　私たちの農園は「キンタ・デ・サン・マテウス(Quinta de São Mateus)」、別名を「キンタ・ドン・ジョアン(Quinta Dom João)」といいます。とても美しい17世紀の農園で、すばらしい眺めがあり動植物も豊かです。規模は土地が27ha、建物が870平方メートルほどです。
　私たちはベルギー人と日本人の家族ですが、この美しい歴史的な農園に1992年に東京から移住してきました。私たちは日本では環境を大切にしながら利用していく方法を長い間人々に教えてきましたが、ここポルトガルではかつて人に教えたことを現実のものにしたいと考え自ら実践することにしました。現代社会の最大の弱点は環境と健康が共に病んでいることですが、この２つは不可分の関係にあり、両者を同時によくしていく必要があります。そのための方法をお知らせすることが私たちの仕事の一つです。
　当キンタの母屋は17世紀の貴族の田舎家でしたので、質素ながらすべての生活機能が備わっています。それに「アデガ」（ワイン醸造所）があり少し離れた所に1668年に建てられた円柱型の大きな鳩小屋もあります。敷地の南にある石灰岩の山の中には、山土を穿って石を積んで作った古い石灰製造用の大釜が２つ残っています。これらはすべて見捨てられ朽ち果てるままに放置されていました。私たちはこれらを何とか保存し半分は復旧させましたが、残りの半分は現在もなお復旧途上にあります。このような歴史的な建物とその周囲の環境を復旧することも私たちの仕事の一つとなっています。

Our farm is called "Quinta de São Mateus" and by nick name "Quinta Dom João". It is a very beautiful farm with a wonderful panoramic view and with rich fauna and flora. The scale is 27 ha in land and 870 m2 in buildings.
We, a belgo-Japanese family, removed in 1992 from Tokyo to this beautiful, historical farm. In Japan, we have taught people how to use the environment, while respecting it, and here in Portugal we decided to put it into practice ourselves, wishing to make it a reality. One of the weakest points of the modern society is that both the environment and health are sick. As these two are in an undivisible relation, both must be improved together. It is one of our jobs to inform of the ways to do so.
The main house of this quinta was the country house of an aristocrat in 17C. So it is equipped with all the facilities to live howevwr simple. There is the "Adega"(winery) and a little bit away there is a large columnar pigeon house as well. In the mountain of limestone, there remain two big kilns to manufacture lime which were made by digging the mountain soil and masoning stones. These were all abandoned and left to decay. Anyhow we reserved them and restored half of them, but the other half is now still in the state of repair. Restore the historical building and its surroundings is also one of our tasks.

The Quinta provides space for artists residence. Exchange free of charge is also possible for a similar situation in another country. Regional galleries will be introduced if necessary.

　私たちは地域環境をこれ以上汚さない生き方を目指して、有機農業と代替エネルギーの利用、ゼロエミッション（廃棄物ゼロ）などのエコファーム作りを実践しています。

　ブドウ栽培とワイン作りを主とし、無農薬栽培の食糧自給率200％を目指しています。
代替エネルギーの利用　USE OF ALTERNATIVE ENERGY
　代替エネルギー利用のあらゆる可能性を追求し、キンタへの導入を図ります。
キンタのエネルギー哲学　THE ENERGY PHILOSOPHY OF THE QUINTA
　一言で表すと、「雨降れば雨に喜び風吹けば風に喜び日が差せば更に喜ぶ」です。
ゼロエミッション（廃棄物ゼロ）　ZERO-EMISSION(ZERO-WASTE)
　ゼロエミッションとはご承知のように東京にある国連大学のグンター・パウリ氏らが提唱した運動で、廃棄物を再資源として徹底的に活用しゼロに近づけることにより持続可能な社会を作り、地域環境を救おうという考え方です。
　キンタでの生活ゴミ量は１人１日約100ｇですから世界の先進工業国の10分の１以下の水準です。生産に伴うゴミもほとんどありません。一方キンタの森林14haが１年間に供給する酸素の量は298トン(ｔ)、吸収する炭酸ガス（炭素換算）量は112ｔです。つまり、キンタの森林だけで人の命1000人分の酸素を供給し（注１）、ポルトガル人の70人分、日本人の45人分の年間排出炭酸ガス量を吸収していることになります（注２）。これに畑・草地12ha余りの吸収分を加えるとほぼ倍の環境浄化能力を持っていることになります。つまり、私たちは現在のライフスタイルを続ける限りマイナス・ゼロエミッションを実現していると言えますし、世界の環境問題に大きく貢献していると言って良いのではないでしょうか。

This eco-farm puts ecological agriculture into practice, as well as alternative energies, zero-emission(zero waste) and so on.

Consisting mainly of natural wine, natural olive oil, and self-sustainable without chemicals, pesticides etc. with a production target of 200%.

USE OF ALTERNATIVE ENERGIES
Investigating and introducting all possibilities to use alternative energies.

THE ENERGY PHILOSOPHY OF THE QUINTA
In a word, "Pleased with rain when rainy, pleased with wind when windy, pleased still more when sunny".

ZERO-EMISSION(ZERO WASTE)
Zero-emission is the movement advocated by the Belgian Gunter Pauli, Assistant President of The UN University in Tokyo and Founder of Zeri Foundation, which concept is to make sustainable societies and to rescue the earth environment, by making complete re-use of refuse as resources so as to make zero waste.

In QUINTA, the average quantity of the domestic garbage is ±100g/pers./year, less than one tenth of that in advanced industrialized countries in the world. There is almost no refuse resulting from production either. On the contrary, the 14ha of QUINTA's forest yearly supply 298 tons of oxigen(O2) and absorb 112 tons of carbon dioxide(CO2), which means that the QUINTA's forest supplies oxigen enough to keep more than 1000 persons' lives* and that it absorbs the carbon dioxide yearly emitted by 70 Portuguese or 45 Japanese**. Adding to this the share of more than 12ha of fields and meadow, it can be said that QUINTA has almost the double ability of enviromental purification. As it were, we have realized "minus zero-emission" as far as we continue the present life style, and we could say that we contribute a lot to the environmental problem in the world.

　キンタでは民宿にお泊まりの方には健康料理を食べていただくほか、健康冊子の発行や健康料理教室などの開催を通して、健康と健康食情報を皆様にお知らせします。

We act to contribute to the health of the earth by ecological agriculture and to change "non-health" in the modern society to health by ecological products, natural food and the healthy cuisine using them.

THE QUINTA'S HEALTHY CUISINE
Modern diseases are mostly life style related ones. And most life style related diseases can be prevented by daily meals. Nowadays, desease or health is made by man. Quinta serves healthy food to visitors staying the night and informs of health and healthy food through publication of booklets and workshop of healthy cuisine.
